Roasting Coffee Beans

For its 3rd year running – we are bringing back the MILKLAB Roaster Royale for 2026! Calling all Aussie roasters that make up our great coffee community.

The brief is simple – come up with your own coffee roast with supplied green beans from InterAmerican Coffee that pairs perfectly with MILKLAB Oat.

Compete to WIN a trip to Columbia, $10,000 cash prize and MILKLAB Roaster Partnership.

How to enter?

  1. Be one of the first 100 eligible roasters to submit their expression of interest before 16th January 2026.
  2. We’ll send out a carton of MILKLAB Oat, green beans supplied by InterAmerican Coffee and Roaster Royale coffee bags by end of January.
  3. Send in 1kg of your roast (using supplied green beans) & entry form by 20th February 2026 to be judged.

From there we will blind taste each coffee blend and announce a Top 5 by 2nd March 2026. The Top 5 roasts will go head to head and showcased at the Melbourne International Coffee Expo (MICE), at the Roaster Royale Grand Finals where winners will be crowned!

Rules & Judging Criteria

Participating roasters must:

  • One entry per roaster, main contact must have permission to represent their roaster.
  • Already be commercially selling wholesale coffee at the time of entry.
  • Be based in Australia.
  • Use only the supplied green beans in their entry.

Blind Judging Criteria

The roasts will all be blind judged using the below brewing parameters:

  • Machine: La Marzocco (any model available in the roaster’s office).
    • 115 PSI.
    • 94°C at the head.
  • Coffee: 18g-22g in the basket.
  • Yield: 35-48g.
  • Extraction Time: 25-35 seconds (tolerance of +/- 2 seconds for an acceptable range, split into 2 shots).
  • Water Mineral Content: Reverse osmosis, remineralised to 30PPM.
  • Grinder: Izaga Markibar.
  • Basket: La Marzocco 21g.
  • Basket: La Marzocco 21g.
  • Alternative Milk: MILKLAB® Oat.

Blind judging will rate the below criteria out of 10:

  • Sweetness
  • Flavour
  • Aftertaste
  • Balance (coffee with MILKLAB Oat)
