Ingredients

  • 160g MILKLAB Soy
  • 60g black sesame cream
  • 1 shot espresso
  • Finely ground black sesame (garnish)

For the black sesame cream (batch, yields ~1L)

  • 250g ground black sesame
  • 200g raw sugar syrup
  • 400g thickened plant cream
  • 190g white chocolate, melted
  • 300g soy milk
  • 7g charcoal powder

Method

Make the black sesame cream — Melt the white chocolate (1–2 minutes in the microwave works). Combine all cream ingredients in a blender and blend until completely smooth. Store refrigerated and use within 3 days.

  1. Steam the base — Add MILKLAB Soy and black sesame cream into a milk jug. Steam together until hot, smooth, and richly textured.
  2. Pour — Fill a cup to seven-eighths full with the steamed sesame milk.
  3. Add espresso — Pull one espresso shot and pour gently on top for a layered dirty latte effect.
  4. Finish — A pinch of finely ground black sesame to close.
